I'd go as far as to say that this knife was one of my worst ever purchases and, more than any other item I've bought online, has taught me the stupidity of relying on other reveiwers.Over a ridiculously short period of time the blade quickly lost its abilities in all ways. By this I mean that it needed honing more and more frequently, and it NEVER gets as sharp as it was when new out of the box, which used to be quite easy to do with a half decent steel.The knife is only a few months old even as I write this, but that's been more than long enough for it to show its weaknesses. I'm not an expert knife sharpener but I'm reasonably good at it (it's not rocket science, after all) and for the first few weeks of use, honing approximately every other day, it used to only take a couple of passes along the steel for this knife to go back to being able to - literally - slice a millimetre off a tomato. I was impressed, and I suspect so were most of the other enthusiastic reviewers.This knife is perhaps better than a Pound Shop offering, but nowhere near professional quality and you can buy similar or better knives MUCH cheaper. Supermarket own-branded products tend to be the best bet here; Asda, Tesco and Morrisons all sell this type of knife for well under a tenner.Ok, so they won't be top pro quality, but then believe me, neither is this Victorinox. Whether or not it's good enough to justify the £20 price tag will, I suppose, be a matter of opinion; personally I REALLY wish I'd put this money towards a better quality knife. The rest of the review remains below, much as I originally wrote it except for the references to the star ratings.ORIGINAL REVIEW:This knife wasn't a totally bad purchase and it just about gets the job done. Adequate for undemanding domestic use and I'd probably give 2.5 stars if I could, which takes into account the fact that many similarly designed chef's knives are SO much higher in price and still only get mixed reviews. If this knife were just a bit dearer, or if the price difference between this and the professional knives weren't quite so wide, then I'd consider 2 stars plenty high enough.On the plus side: (SEE EDIT*This knife is (comparatively) inexpensive. It arrived sharp, and is fairly easy to keep that way (so far) with just a few passes on the honing steel. It's stainless in case you forget to clean it immediately after use (yes, I know that's bad practice) and I find it a useful length for everyday use.Not so pleasing: (*SEE EDIT)Doesn't keep its edge very long, you need to hone the blade pretty much every time you use this knife. I know professional chef's would probably do this as a matter of course but, for reference, a friend has a more expensive knife of similar design which stays sharper for much longer. It's not as if I use this knife to prepare complicated meals for large groups; just dicing a few carrots and onions is enough to 'take the edge off'.The overall feel is also immediately flimsier and cheaper than my friend's knife (though in fairness so is the price). For instance, the blade is noticeably thinner and bends more in use. It's not too bad, and I never feel unsafe with it, or as if it's about to snap, but it doesn't have the same solid, quality feel in use. The plastic handle feels especially cheap, although it's comfortable enough to grip once you get used to it.Personal taste:This knife has a slightly different shape from the classic design chef's knife. It's subtle, but the blade has a bit less of a curve to it, which I find doesn't improve its utility, especially for fine chopping (chillies, onions, parsley etc) for which I like to use the 'rocking chair' motion. The blade also isn't quite as broad as other knives I've used, and these two factors together reduce the clearance between my knuckles and the chopping surface. Not a drama, but also not especially desirable.Harder to describe is the 'shininess' of the blade. Sounds nice, but in practice the sides of the blade have an almost mirror-like shine which, whilst not exactly unpleasant, also doesn't look or feel quite natural. It also means that every slice of veg clings - more so than with any other knife I've ever used - so that you need to manually slide the slices off with the side of your finger or by drawing the side of the blade across the edge of the pot or chopping board. I realize this happens to some extent with other knives, but with this one it's literally every single slice, which makes it more tedious than it may sound.
